Ah, your lemons are looking so much healthier and happier than mine! Last year I made marmalade but cut the rind too thickly to satisfy my husband. I've used it instead as the basis of a fruit cake, posted on my Miss Cellany site, and it is such an easy and tasty recipe that I recommend it to you. My lemon trees are now under cover for the winter and although they are cropping well they are suffering from black mould and cold temperatures.
