The large flower buds of the globe artichoke are valued as a vegetable in the West. Piles of large flower buds can be seen in markets.
We have been growing artichokes in our garden for about five years. This year we have three varieties growing, each with slightly different flower shapes and colours. In May we boil the flower buds when they are large enough to enjoy their unique flavour. There is little difference in taste between the different varieties. Flower buds left uneaten bloom around the end of June. Their large, beautiful purple flowers are a sight to behold. When they have finished flowering, they can be enjoyed as giant dried flowers.
Artichoke is a perennial plant, the above-ground stems and leaves die back in summer and sprout again in autumn.

私たちの庭でも5年ほど前からアーティチョークを育てています. 今年は3品種が育っていて、花の形や色がそれぞれ微妙に異なります. 5月には大きくなってきた花蕾を茹でて、その独特の風味を楽しんでいます. 品種による味の違いはあまりありません. 食べずに残した花蕾は6月の下旬ごろに開花します. その大きくて美しい紫色の花のすばらしさには圧倒されます. 花が終わったら、巨大なドライフラワーとして楽しむことができます.
アーティチョークは多年草で、地上部の茎や葉は夏には枯れて、秋にまた新芽がでてきます.
